I would like to know if I could use a wireless network setup like the following will work.
My laptop is connected to a wireless router with an Ethernet cable and my Xbox 360 has a wireless adapter on the back of it connected to my router wirelessly. I will run Xlink Kai on my laptop using UI.

I am asking and not doing it myself as I have not bought a wireless adapter for the Xbox 360 yet. I have been able to go on Xlink Kai on Halo 2 on the original Xbox connecting with Ethernet cables.

Wireless doesn't work, sorry. You can have your laptop wirelessly connected and wire your 360 to it using a crossover cable.

That setup *may* work since the xbox wireless adapter is designed to carry the traffic correctly, but is that really worth the $70 for the adapter? I recommend you use a network cable to the xbox since it is guaranteed to work. Good luck!
